To be classified as maltitol, the raw material must contain over 60% maltose; otherwise, the maltitol content after hydrogenation would account for less than 50% of the total polyols and could not be designated as maltitol. The primary hydrogenation process involves the following steps: raw material preparation, pH adjustment, hydrogenation reaction, filtration and decolorization, ion exchange, evaporation and concentration, and finally, product formation.
