How Are Cocoa Beans Processed Into Three Core Products

Step 1: From Cocoa Beans to Cocoa Mass
This is the foundation for all further processing. Fermented and dried cocoa beans are sent to factories for:
- Roasting: Beans are roasted at 120-150°C to develop rich chocolate flavor and make the shells brittle.
- Winnowing: Beans are cracked, and air is used to blow away the lighter shells, leaving pure "cocoa nibs".
- Grinding: The cocoa nibs are ground by heavy mills. Friction generates heat, melting the natural fat (cocoa butter, about 55% of the nib).
- Result: A hot, flowing brown paste is produced. This is "cocoa mass" (or cocoa liquor). It solidifies into hard blocks when cooled.
Cocoa Mass = The natural mixture of cocoa solids + cocoa butter. It is the base ingredient for all chocolate products, determining the fundamental flavor and color.


Step 2: From Cocoa Mass to Cocoa Butter and Cocoa Cake
This is the critical separation step, using powerful hydraulic presses on the cocoa mass.
- Pressing: Warm, soft cocoa mass is placed into a press under immense pressure.
- Separation:
- The golden liquid that flows out: This is pure "cocoa butter". It solidifies at room temperature, is ivory or pale yellow, and has a pleasant chocolate aroma without strong bitterness or acidity.
- The solid cake left in the press: This is the "cocoa cake". It still contains about 10%-24% residual cocoa butter, with the remainder being dry cocoa solid particles.
Step 3: From Cocoa Cake to Cocoa Powder
This is the final step of pulverizing and refining.
- Milling: The hard cocoa cake is crushed by hammer or roller mills.
- Cooling & Sifting: The crushed powder is cooled and passed through fine sieves to ensure uniform, fine particles.
- Types: Based on the alkalization of the cake and fat content, different cocoa powders are produced:
- By Treatment:
Natural Cocoa Powder: Not alkalized; lighter color (reddish-brown), acidic and tart flavor.
Dutch-Process/Alkalized Cocoa Powder: Treated with an alkali; darker color (deep brown), milder, smoother flavor, better solubility. This is now the mainstream type.
- By Fat Content:
High-Fat Cocoa Powder (≥20%)
Medium-Fat Cocoa Powder (10%-20%)
Low-Fat Cocoa Powder (<10%)
Cocoa Powder = Cocoa cake in powdered form. It is the concentrated flavor of the cocoa bean, widely used in baking, beverages, desserts, and the food industry.
